Winter Salads

Winter time is salad time 🙂 as weird as it sounds 😀 . Here we have some recipes of the best vegan salads of this season.

Turnip salad


Delicious raw turnip salad, that would satisfy even the most lavish taste buds, loaded with numerous health benefits!


  • Turnip
  • Lemon
  • Olive oil
  • Raisins
  • Curly parsley
  • Flax seeds
  • Salt

Mix lemon juice, olive oil and pinch of salt, add raisins and soak for few hours or overnight. For two medium sized turnips I would use 1 lemon, about 1-2 tbsp of oil and about 1 handful of raisins, you can adjust to your liking. Cut the turnips in strips by hand or grate and add to the raisin, lemon and olive oil mixture. Add roughly chopped parsley and flax seeds, mix well and leave to marinate for a minimum an hour or overnight.

Black radish and tatsoi salad


Health on a plate! Simple and quick to prepare.


  • Black radish
  • Tatsoi
  • Lemon juice or cider vinegar
  • Olive oil
  • Salt

Grate the radish, add lemon juice or vinegar, oil and salt to taste. Mix well and decorate with tatsoi leaves.

Quinoa salad


Quinoa is well known for its beneficial properties and topped up with mint, parsley and lemon is an ultimate health boost and exotic tasting dish.

  • Quinoa
  • Mint
  • Parsley
  • Lemon or lime
  • Olive oil
  • Salt
  • Honey (optional)

Cook quinoa in water, till the water evaporate, similar to cooking rice. Leave to cool and in meantime prepare the dressing by mixing lemon or lime juice with olive oil, little dash of honey (optional) and pinch of salt. Chop the mint and parsley finely and mix well with dressing. You will need a generous amount of herbs for this salad, the more the better. When the quinoa is cold add to the mixture and mix well.

Potato salad


Another simple, but nutritious salad, that can be served hot or cold.


  • Small potatoes
  • Dill or/and parsley
  • Mustard
  • Sunflower seeds
  • Paprika
  • Lemon juice or cider vinegar
  • Olive oil
  • Salt and pepper

Boil potatoes and in meantime make the dressing by mixing lemon juice or vinegar with olive oil, little mustard, salt and pepper. Mix everything together add herbs, seeds and sprinkle of paprika.
